As far back as antiquity, the seed of the mustard plant (with its yellow flowers) was transformed into a fine, aromatic paste used both medicinally and culinarily. The words “moutarde” and “Sénévé” first appeared in the French language in the 13th century. It was used by people of modest means to spice up dishes in place of pepper (an expensive imported spice). Over the centuries, mustard has become a quality food synonymous with wealth, refinement and pleasure. The first fine, aromatic mustards appeared in the 17th century. Since 1840, Fallot has been one of the few companies to stone-grind the seeds, thus preserving all the paste’s taste qualities and giving mustards an incomparable flavor.
