Sweets made from a mixture of almonds and candied fruit have existed since Greek and Roman antiquity.
Calisson d’Aix, known as Calisone in Italy and Kalitsounia in Greece, is thought to have appeared in its modern form around 1473, at the wedding feast of King René d’Anjou’s second marriage to Jeanne de Laval. As this confection brought a smile to the future queen’s face, a guest was quoted as saying “di calins soun”, “these are cuddles”.
According to another explanation, the calissons, blessed by the Archbishop, were distributed to the faithful to the chant: “Venite Ad Calicem”, “Venez au calice”, which translates into Provençal as venes toui i calissoun.
